The traditional one

CHARACTERISTICS
A lightly sparkling white wine produced according to the traditional method of our  past generations. The second fermentation is made the bottle that gives to this wine an unique characteristic, considered  the real representative wine of the area.
This wine calls for a brief re-fermentation in the bottle during the spring, and it is meant to be drunk in the summer and autumn following the vintage.
It has a characteristic straw-like colour and on the nose, apart from fruity and floral aromas, one also finds attractive faint yeasty hints. The wine should be poured from the bottle into a decanter, in order to separate any deposits.
The colour is straw bright yellow (slightly darker if it is too violently shaken), with a lively sparkling nature.
The bouquet is elegant and complex, with a typical fruity aroma and a hint of bread crusts which continues to change due to the activation of its yeasts.
It tastes fresh, slightly bitter, but refreshing; the best of a dry taste.
This wine is suitable for a snack or a meal with friends, matched with typical cold meats (e.g. salami, sopressa,prosciutto). It’s the perfect wine for aperitifs and best matched with cold meat.

The Hillsides of Valdobbiadene

HARVESTING
Strictly by hand between the second half of September and the beginning of October

WINEMAKING PROCESS
White vinification with soft pressing of the grapes

PRESERVATION
This wine should be consumed within one year of production and should be stored in a cool and dark place at a temperature below 15°

SERVING
This wine should be served at a temperature between 6° and 8° C.°

Cartons of 1, 2, 3, 6 or 12 bottles.
